Bananas foster is a delicious and unique dessert that combines several great flavors in a special way. Bananas, brown sugar, butter, vanilla, cinnamon and walnuts come together with a splash of spiced rum, then the whole concoction is lit on fire! The flames burn off the alcohol while keeping the rum's distinctive flavor, and when placed atop vanilla ice cream, the result is pure bliss.

Things You'll Need

  • medium cast iron skillet

  • matches, preferably long ones

  • 4 tbs unsalted butter

  • ½ cup brown sugar

  • 1 ½ tsp vanilla extract

  • ½ tsp cinnamon

  • kosher salt

  • 2 bananas, sliced

  • ⅓ cup roughly chopped walnuts

  • 4 tbs spiced rum (80-90 proof)

  • vanilla ice cream, for serving

Step 1

Add the butter to a cast iron skillet and set over low heat. Once melted, add the brown sugar, cinnamon, vanilla and a pinch of salt. Cook for about two minutes, or until the mixture begins to thicken and bubble.

Step 2

Add the banana slices and chopped walnuts, then combine until fully coated with sauce.

Step 3

Turn the heat off and carefully add the rum to the center of the pan, then stir a few times to combine. Using a long match or lighter, very carefully ignite the rum. Allow the flame to extinguish on its own, about 30 seconds, then give everything one last mix.

Step 4

Divide a few scoops of vanilla ice cream between four bowls. Spoon an even amount of the banana topping into each bowl and enjoy immediately.
