  • 1 tablespoon olive oil

  • 1 small yellow onion, diced

  • 3 celery stalks, diced

  • 3 medium carrots, peeled and sliced

  • 2 cups cremini mushrooms, sliced

  • 1 Tbsp. all-purpose flour

  • 11 oz. Guinness beer

  • 3 Tbsp. tomato paste

  • 2 Tbsp. Dijon mustard

  • 1 Tbsp. sugar

  • 1 tsp. salt

  • 1/2 tsp. ground black pepper

  • 1/4 tsp. paprika

  • 1 Tbsp. fresh thyme, plus more for garnish

  • 3 medium potatoes, peeled and cubed

  • 4 cups vegetable broth

Don't skip the sugar—it's needed to tone down the bitterness of the beer.

1. Cook vegetables

In a large pot over medium heat, warm the olive oil. Add the onion, celery, and carrots. Cook for 5 to 7 minutes, or until the onion is tender.

Add the mushrooms. Cook for another 5 minutes.

If you don't like mushrooms, feel free to leave them out.

Sprinkle the flour evenly over the vegetables.

Cook for 3 minutes, stirring to fully coat the vegetables.

2. Add Guinness beer

Pour the Guinness beer into the pot. Cook for 1 minute.

3. Add remaining ingredients

Add the tomato paste, Dijon mustard, sugar, salt, ground black pepper, paprika, and fresh thyme. Stir well to evenly disperse the tomato paste and Dijon mustard. Finally, add the potatoes and vegetable broth.

Simmer for 45 to 55 minutes, or until the liquid has thickened.

Tip

To make the stew even heartier, add dried lentils to the pot about 15 to 20 minutes before the cooking time is done. Another option is to mix your go-to plant-based protein into the finished stew.
