Eggplant and oysters can make a scrumptious appetizer. Along with other ingredients like bacon, you can quickly prepare this recipe as ingredients can easily be found in the kitchen. You need 2 eggplants, 3 dozen drained oyster, 3 chopped onions, 8 tbsp. butter, 10 sliced bacon, ½ cup, seasoned bread crumbs, salt and pepper.

Bake the eggplants for about 45 minutes at 400 degrees, then set aside to allow cooling. You can start sautéing onions in butter and bacon until crisp. Peel and cut the baked eggplants into cubes, then mix with the sautéed onion, bacon, drained oysters and seasoned bread crumbs in a bowl. Add salt and pepper to taste. Divide the mixture into 4 portions and place in baking dishes. Pour melted butter and sprinkle the remaining bread crumbs. Bake at 425 degrees for about 20 minutes or until golden brown.

Bacon

Bacon is another appetizer ingredient that blends well with oysters. The crisp texture and salty taste of bacon makes a perfect addition to the oysters. Gather together 6 bacon strips, 2 dozen oysters, 1 cup butter, ½ cup chopped green onions, ½ cup chopped parsley, 1 tbsp. lemon juice, 2 tbsp., chopped green bell pepper, salt and pepper.

Arrange the oyster shells in a pie pan filled with rock salts. Mix the remaining ingredients butter, onion, parsley, lemon juice and green pepper in a bowl. Add a spoon of the mixture on top of each oysters, then bake for 30 to 40 minutes or until bacon becomes crisp.

Bread

Cooking oyster with bread makes a good appetizer combination. One of the many ways to do it is to bake oyster puffs. For this, use 2 dozen finely chopped oysters, 1 cup water, ½ cup butter, 1 cup flour, 4 eggs, cocktail sauce, salt and pepper.

Heat water and margarine in a saucepan then add flour and salt. Continuously stir the mixture over low heat for about 1 minute, or until it forms a ball, then set aside. Beat in eggs until smooth then add the chopped oysters. Create rounded teaspoons of the mixture and drop onto ungreased cookie sheet. Bake for about 25 minutes or until puffed and golden.

Cheese

Cheese goes well with almost anything and what else would you have mind when you add it to oysters but Rockefeller. To make Oysters Rockefeller, gather 1 egg, 2 cups medium White Sauce, 2 dozen shell oysters, 2 tbsp. sherry, 2 tbsp. butter, 1 tbsp. finely chopped onion, 1 lb. finely chopped spinach, 1 tbsp. minced parsley, ½ tsp. Worcestershire sauce, ½ cup grated Parmesan cheese, 6 drops tabasco, salt, pepper and ground nutmeg.

Stir the egg, add the white sauce then set aside. Pour rock salt into a roll pan then arrange the oyster shells on it. Mix the butter, onion, spinach, white sauce, parsley, Worcestershire sauce and tabasco in a pan. Sprinkle sherry on each oyster then add the mixture. Bake for about 30 minutes.
